You’ve probably heard of the healing wonders of New Zealand Manuka honey, both in traditional and modern medical use. Well, Jellybush honey is the Australian version. Much like we can’t claim a fine chilled Aussie sparkling to be Champagne, or a good, aged, hard cheese to be Parmigiano-Reggiano, for reasons of “protected designation of origin”, we can’t pinch the name of our Southern cousins’ native plant. Rightly so though, as there are some important distinctions.
