The Aussie Difference

Manuka honey comes from the flowers of the Leptospermum scoparium tree, native to New Zealand (with some small stands also found in Australia).
While Jellybush honey is derived from, predominantly, Leptospermum polygalifolium, a small shrub-like tree found extensively throughout the eastern coastal ranges of Australia.
So, while of the same genus (Leptospermum), they are slightly different species. What many may not know is that honey from Jellybush flowers generally contains higher concentrations of the main bio-active compound, methylglyoxal (MGO), than its Kiwi counterpart.

Unfiltered Raw Honey

Honey-getters in the know can produce an even higher MGO content after harvesting through a special ageing process. The Jellybush honey we use exclusively in our range has a consistently high MGO content of over 200mg/kg (200+ MGO), as verified by the boffins at the University of the Sunshine Coast “Honey Lab”, in Queensland (Lab results provided on request).
We use only unfiltered, raw, aged/activated Jellybush honey from Leptospermum flowers, sustainably sourced in the pristine Byron hinterland in the Northern Rivers area of NSW.
 

The Process

The Source

Hives are responsibly and strategically placed in dense stands of Leptospermum poligalifolium trees, on a seasonally-appropriate schedule, in the lush hinterland behind Byron Bay and Mullumbimby.

Harvesting

The bees do their thing, the honey is collected, and the hives are moved to a new location.



Activation

The harvested honey is aged in casks at a stable temperature between 22-32 degrees C for between 3-6 months. This step takes the MGO count from baseline to a peak level by allowing the enzymes naturally present in the honey to convert all the precursor compounds into their active form. This is activation.
